Commis - Full Time

About the role

The Four Seasons Hotel Seoul is looking for a full-time Commis, a line staff position reporting to the Chef de Partie. The Commis prepares food items according to guest orders, sets up stations for breakfast, lunch and dinner service and supports the Food and Beverage operation.

Key responsibilities

• Prepare food items to order following recipe cards, production, portion and presentation standards, and complete mise en place and station set-up
• Start items prepared ahead of time, keeping within estimated needs
• Operate, maintain and clean kitchen equipment such as deep fryers, ovens, mixers, slicers, steam tables and flat-top grills
• Date and rotate food containers, check pars, control food waste and loss, and help fix food cost problems
• Keep store rooms, fridges and walking fridges tidy
• Follow HACCP procedures and hygiene standards in banquet food preparation
• Report damaged equipment to the Commis I, attend staff and departmental training, and support the F&B operation in other areas if needed
• Communicate clearly with guests and staff, and remain calm and alert during emergencies

Required profile

• High school education, cooking school or culinary institute education, or equivalent experience
• At least one year of culinary or related work experience
• Valid work authorization in South Korea
• Ability to work all shifts, weekends and holidays

Required skills

• Working knowledge of Four Seasons' cultural standards, policies and standard operating procedures
• Basic computer skills for online training and managing employee profiles
• Ability to operate, maintain and clean knives and kitchen equipment
